Tomato Choka

1lb (about 6) tomato. 1 onion, 4 garlic, 1/2 a WI Pepper all finely chopped.
Boil tomatoes until skin splits and then drain. Remove skins and pound (I use a pestle, but a rolling pin end works fine) until mashed up. Fry the fine chopped ingredients until starting to brown and then add tomato mixture and mix. You don't want the onion garlic pepper mixture to brown but to be on the edge. The taste should have a rawness to it, but if you use all raw ingredients its too raw. Serve with Sada roti.
